Source of Nitrites: Both nitrites and nitrates are nitrogen-oxygen chemical compounds. Nitratesare a contaminant often found in water because of agricultural and fertilizer run-off or from leaking septic tanks. The US EPA has established the MCL (maximum contaminant level) for nitrates in tap water at 1 mg/l. Nitrates are reduced to nitrites in the saliva of the mouth and upper GI tract of the human body. This process occurs to a much greater degree in infants than in adults, because of the higher alkaline conditions in their GI tract.
Symptoms of Nitrites: Once the nitrites are in the body, they then limit the blood's ability to carry oxygen throughout the body. Anoxia (an insufficiency of oxygen) and death can occur. Infants are particularly at risk for "blue baby syndrome" where skin will turn blue from lack of oxygen.
